Angel food cake originated in the US and is known as 'food of the angels' due to it's light and fluffy texture.

Preheat oven to 180°C, Whisk egg whites in a bowl until foamy. Add the Cream of tartar, Vanilla extract & Almond extract and continue whisking until the mixture becomes stiff.
Add the caster sugar (1 tbsp at a time) whisking continuously, the mixture will become shiny and form stiff peaks.
Using a metal spoon fold in the flour until completely blended.
Spoon the mixture into an ungreased Angel food cake tin and bake on the lowest shelf of oven for 45 mins or until golden brown.
To cool, turn the tin upside down ensuring to support the centre column, this will allow the cake to 'stretch' downwards. Leave to cool for at least 1½ hours.
To remove the cake from the tin, run a knife around the edge and turn out onto a plate.
Decorate with fruit, chocolate, fondant icing etc.
