This pack of 8 leaves of gelatine is perfect to use as a setting agent in mousses, jellies and terrines. Also useful when creating models of buildings etc to use as windows!
4 leaves sets approx 1 pint (570ml) of liquid, soak the gelatine in cold water for 5 mins.
Squeeze out any excess water, place the soaked leaves in a saucepan on a very low heat and melt slowly.
Do not let the mixture boil as this may effect the setting process.
For a firmer set in larger moulds (large terrines, enriched jellies etc) use 5 leaves per 1 pint (570ml) liquid.
