Step 1

Roll out cookie dough to approx 5mm thick.

Cut out Skull shapes.

If decorating with just Royal Icing, emboss the dough before cutting the shape out.

Cookies to be covered with Sugarpaste, leave the dough shape plain.

Place on tray, and bake cookies as above.

Leave to cool.

Step 2

Roll out white sugarpaste to approx 3 – 4 mm thickness. Using cutters, emboss the designs before turning over to cut out the shapes of the skull. Place onto cookie using jam or piping gel to fix. Allow to dry. (Repeat with black sugarpaste if wished)

This is where taking time to prepare is the key to success. Once all icings are coloured and placed into piping bags you are ready to go.

Step 3

Using a quantity of royal icing, add a touch of water to achieve an icing halfway between a piping and run-out/flooding consistency. Split into tubs with a small amount in each, and colour with your choice of bright colours - choose at least 5 or 6. Leave one tub white if also making black and white ones.

Top Tip: There is no need to mix black, if using, at this stage. You can mix your leftover icings together and add black colouring afterwards to be more economical.

Step 4

Place each colour into a small piping bag fitted with a fine writing nozzle. We recommend you use a nozzle, rather than just the bag, as this is more accurate for piping the icing into the embossed design, as it is quite fine in parts. You will need quite a few nozzles.

Step 5

Pipe into the design, using any colours, anywhere. There is no need to plan, just use bright colours. At this stage, have a damp paintbrush handy to help with accuracy, or to correct mistakes. If you wish, extra decoration may be added. In fact you will probably find that once you start decorating these colourful cookies you won’t be able to stop!!!  Allow to dry.
