This delicious low sugar and low fat fruit loaf is packed full of goodness. Containing dried fruit and all bran it will leave you feeling fuller for longer and much less guilty!
100g Dried Figs (Chopped)
1 Cup Cold Tea
Juice ½ Lemon
75g All Bran
3 tbspns Maple Syrup
1x Egg (Beaten)
150g Wholemeal Self Raising Flour
½ tspn Mixed Spice
40g Soft Light Brown Sugar
1x Dessert Apple (Peeled and Coarsely Grated)
Place fruit, figs, tea, lemon juice, syrup and All Bran into a bowl and leave to soak overnight.
Sieve flour and mixed spice together and add sugar. Add to fruit mixture with the beaten egg and stir until well mixed. Add apple.
Place mixture into lined 2lb tin and bake at 170ºC for approx 1 – 1½ hours.
Cool in tin, then place on a wire cooling rack to cool completely.
Serve sliced with low fat spread if wished.
