You Will Need

110g each dried apricots, pitted prunes and glace cherries

150g each butter and light soft brown sugar

300ml unsweetened orange juice

50g/2oz candied peel (optional)

220g plain flour

1 tsp bicarbonate of soda

2 medium eggs

Step 1

Line an 8” round tin and roughly chop your apricots, prunes and cherries.

Step 2

Place the butter, sugar and orange juice into a saucepan over a medium heat and stir until melted.

Add the chopped fruit and simmer for 10–15 mins. Leave to cool.

Step 3

Sieve flour and bicarbonate of soda into a bowl and add the cooled fruit mixture.

Beat eggs and stir into cake mixture.

Step 4

Pour your mixture into the tin and bake at 160 degrees C for approx 1-1 ½ hours until firm. Leave in tin to cool for 15 mins before turning it out onto a wire rack to cool completely.

Step 5

Serve your cake as it is or decorate with whole apricots, prunes and cherries. Use an apricot jam glaze over the top for an extra shine!
