This delicious lemon drizzle cake recipe is perfect for any celebration cake.
200g Caster Sugar
4 Medium Eggs
200g Self Raising Flour
Zest and Juice of 1 Lemon
2 tsps. Caster Sugar
Cream fat and sugar together until light and fluffy. Beat in eggs a little at a time. If mixture curdles add a little of the flour.
Fold in sieved flour and zest of lemon.
Spray tin with Cake Star release spray, and place mixture in tin. Bake for approx 30 mins at 170ºC.
Turn out of tin. Mix lemon juice and caster sugar together and warm in microwave until sugar is dissolved. While cake is still warm, drizzle the juice over the cake. Allow to cool completely on cooling rack.
