This classic madeira cake recipe is great for making delicious sponges for birthday and occasion cakes.

You will need
6" Round Cake Tin (800823)
 
200g Caster sugar
200g Margarine
200g Self Raising Flour
50g Plain flour
4 Eggs
1 tsp Vanilla (54385)
 
Optional Extras:
Colourings
Alternative flavourings

 

Step 1

Pre­heat oven to 160ºC and line 6”cake tin with baking parchment.

Step 2

Cream together the margarine and sugar until light and fuffly.

Add the flour, eggs and vanilla flavouring and beat together until smooth.

Step 3

Place into tin and smooth the top. Bake for approx. 1 hour (make sure the cake is baked fully by inserting a skewer and making sure it is clean) remove from oven, and cool on a wire cooling rack

Wrap in greaseproof paper until required.
