Bake the perfect red velvet cake using our simple yet delicious recipe!
For a 6" cake
150g/5oz Butter, softened, plus extra for greasing
150g/5oz Caster Sugar
2 Free-Range Eggs
Few drops Vanilla Extract (065601)
125g/4½oz Plain Flour
25g/1oz Cocoa Powder
1½ tsp Baking Powder (065728)
1 tbsp Colour Splash Food Colouring Gel - Red (0675069)
For the cream cheese frosting:450g Cream Cheese, softened125g Butter, softened250g Sieved icing sugar1 tsp Vanilla Extract (065601)
Beat the butter and sugar together in a large bowl until light and fluffy.
Gradually beat in the eggs, vanilla and salt, and half of the flour to prevent the mixture from curdling.
Add the remaining flour, cocoa powder and baking powder and give it a final beat to mix together.
Add the food colouring and mix well.
Spoon into the prepared tin and bake for 40-45 minutes, or until a skewer inserted into the middle comes out clean.
In a medium bowl, cream together the cream cheese and butter until creamy. Mix in the vanilla, then gradually stir in the icing sugar.
Cut your cake into two or three layers once completely cool and use you cream cheese frosting to fill and ice the cake.
