Step 1

Mix in tylo powder to the cover paste, and leave for 1 hour to strengthen.Take a small piece off and colour green for the calyx of the strawberries. Colour some covering paste lemon and some strawberry. The amount will depend on how many cupcakes you are making.

Step 2

Roll out each colour to approx 3mm thick, and cut out 78mm circles of paste.

Using the flower/leaf shaper tool, make indented lines on the yellow circles for the tennis balls.  With the tip of the no.1 tube, mark the seeds on the strawberries.  Place the circles of paste onto the foam ball halves to dry, making sure they are centred.

Step 3

Colour some royal icing green, and with the small grass tube, pipe around the edge of the tennis ball cupcakes (purple cases) for the grass.  With white royal icing and the star tube, pipe ‘cream’ around the edge of the strawberry cupcakes.

Step 4

Add a swirl of buttercream onto the top of each cupcake, just enough to support and secure the ‘dome’ of covering paste.  Place yellow domes (tennis balls) onto piped grass cupcakes, and strawberry domes onto piped cream cupcakes.

Step 5

With white royal icing and the no.3 tube, pipe over the indented lines on the balls.  Colour a little royal icing orange, and with the no 1 tube, pipe dots over the seed markings.

Pipe a second row of ‘grass’ around the tennis ball cupcakes to give a neat finish on the edge.

Step 6

Using the small piece of green covering paste, roll out and cut calyxes with the daisy cutter.  Cut in half and position a half onto each of the strawberry cupcakes to complete.
