This chocolate flavoured cookie cake is perfect for any chocoholic's birthday celebration. The perfect mix between a cookie and a cake, this trend is ideal for creating bespoke designs everytime!

Cookie Cake Recipe
This recipe will make 2 layers for one number, Approx. 9” to 11”
150g Self Raising Flour (06843006)
150g Plain Flour (06843008)
Cocoa Powder (For chocolate cake substitute 2 tbps flour for 2 tbsps cocoa)
200g Butter
50g Icing Sugar (06843002)
25g Caster Sugar (06843003)
1 Egg
Pinch Salt

Make paper templates for the numbers you require.

Place flours, cocoa, butter, sugars and salt into a large mixing bowl. Rub in until all ingredients are crumbled.

Add egg and mix together until well combined. Chill for 1 hour.

Roll out and cut number twice. Place on baking tray lined with baking parchment. Chill for a further ½ hour.

Bake at 165ºC Fan/180ºC. for approx. 20 mins. Leave on tray to cool completely.  

Repeat for second number (If required)

250g Mascarpone
500g Double Cream
150g White Chocolate
1 tspn Neilson Massey Vanilla Extract-60ml (5572)
Cake Star Disposable 12” Piping Bags-Pack of 12 (84798)
Small Round Piping Nozzle (Optional)


Melt white chocolate and allow to cool completely.

Place mascarpone, cream and vanilla into a large mixing bowl and whisk together until combined into a stiff mixture. Fold in the cooled chocolate.

Place mixture into piping bag fitted with nozzle. Pipe onto the base layer, and sandwich the two layers together. Pipe onto the top layer.

Add decorations onto the top layer at random using the chocolate buttons from the Belcolade packs.

You may add any other decorations of choice eg. Rolos, Smarties M & M’s etc.
