Gingerbread Recipe
12oz/350g Plain Flour (06843008)
1 tsp Bicarbonate of Soda (065707)
2 tsps Ground Ginger
1 tsp Ground Cinnamon
4½ oz/125g Butter
6oz/175g Soft Light Brown Sugar
1 Egg
4 tbsps Golden Syrup

Sieve flour, bicarb and spices into a large bowl. Add butter and rub in until mixture resembles fine breadcrumbs.

Lightly beat egg and golden syrup together, add to mixture and mix until all ingredients come together into a soft dough.  Knead, wrap in cling film and chill fin fridge or 30mins.

Preheat oven to 180ºC/Gas 4. Line baking trays with baking parchment.

Roll out dough to approx ¼”/0.5cm thickness on a lightly floured surface. Using cutters, cut out and emboss your chosen designs, and place on baking tray, leaving space between them.

Bake for 12-15 mins or until golden brown. Leave on tray for another 15 mins, and then remove to a cooling rack to cool completely.

Decorating Ideas

Cocoa: At cutting out stage, place embosser into cocoa powder first, then emboss onto dough.

Writing Icings: Use a variety of writing icings to decorate.

Sugarpaste: Roll out sugarpaste thinly. Cut out and emboss. Stick onto cookie using jam. Allow to dry, then use edible pens and/or writing icings to decorate.
