Cookie Recipe
225g (8oz) Self Raising Flour (06843006)
125g (4oz) Caster Sugar (06843003)
125g (4oz) Butter
1 small Egg
Finely grated Rind of ½ Lemon and 2 tsps Lemon Juice

Sieve flour and sugar into a bowl. Rub in butter until mixture resembles fine breadcrumbs. 

Add grated rind, and mix to a stiff paste with egg and lemon juice. Chill in fridge for 1 hour.

Roll out dough thinly and cut out to shape of choice. Place onto tin lined with baking parchment.

Bake at 180ºC for approx.10-12 mins.

Leave to cool on the baking tray then remove onto a cooling rack.

Stained Glass Window Snowflakes
You will need:
Cake Star Cutter and Texture Mat Set-Snowflakes (84855)
Stainless Steel Geometric Cutters-Set of 24 (5003)
Colour Splash Food Colouring Powder-Pearl-Snowflake (75085)
Colour Splash Food Colouring Powder-Pearl-Silver Sparkle (75086)

Ribbon

Cut out dough with either of the larger snowflake cutters from the set. Place on baking tray, and cut a circle or other small shape from the centre taking care to keep the shape of the snowflake. 

Use a straw or large writing nozzle to make a small hole in the cookie for the ribbon to be threaded through.

Melt the isomalt following the simple instructions on the pack. Quickly pour or spoon isomalt into the centre of the snowflake cookie. 

Bake as recipe. Leave to cool on the baking tray, and then remove to a cooling rack.

Decorating Options

Dust isomalt centre with snowflake or silver sparkle, or leave clear.

Pipe fine lines with white royal icing to resemble snowflakes.

Cut out a snowflake with white sugarpaste, and texture using one of the texture mats. Place onto cookie. Dust if you wish.

As above but use the side of the mat to give a raised finish. Dust mat with a contrasting colour such as turquoise.

Thread ribbon through the hole.

You will need:
Stainless Steel Star Cutters-Set of 6 (10486)
Cake Star Granulated Isomalt-250g (75235)
Colour Splash Food Colouring Powders-Pearl-Yellow (75102)

Ribbon

Cut out dough with large star cutter. Place on baking tray, and cut out another small star from the centre taking care to keep the shape of the star. Use a straw or large writing nozzle to make a small hole for the ribbon to be threaded through.

Melt the isomalt following the simple instructions on the pack. Add a powder colour of choice and stir, eliminating the excess bubbles. Pour or spoon into the centre.

Bake as recipe. Leave to cool on the baking tray, and then remove onto a cooling rack.

Thread ribbon through the hole.
