Present these homemade Christmas cupcakes in the shape of a Christmas tree for a really special gift!

You Will Need:

175g Butter
175g Caster Sugar (06843003)
175g Self Raising Flour (06843006)
½ tsp Baking Powder
½ tsp Mixed Spice
3 Medium Eggs

Place cupcake cases into a muffin tin. Preheat oven to 190°C/ 170°C Fan / Gas Mark 5.

Sieve flour into bowl, along with all other ingredients except mincemeat. Beat well with electric hand mixer for 2 - 3 minutes, until light and fluffy.

Place a dessertspoonful of mixture into each cupcake case, then add ½ teaspoon mincemeat, finishing with another spoonful of mixture.

Bake for 20 - 25 mins or until golden brown on top.  Remove from oven and allow to cool completely.

Make small candy canes: Take 25g ball of white paste plus two tiny balls of red. Roll out white in a 3” ‘sausage’ and both red balls into thin ‘sausages’ the same length.  Place these against the white and flatten the red. Continue rolling out the sausage until thickness required. Twist and cut to length. Turn over the top. Leave to dry.

Roll out white paste and cut out small snowflakes. Dust with snowflake pearl colouring powder. Also cut out a star with the smallest star cutter, and dust with rich gold pearl colouring powder.

Colour the frosting green, and pipe rosettes onto each cupcake, covering the tops. Add all decorations as required, finishing each cupcake with sprinkles.

Arrange on a board in a Christmas tree shape and place the star on the cupcake at the top.
