This pretty mermaid cake is decorated using just buttercream and ready made sugar pipings making it so easy and simple to create.
Bake an 8" cake, flavour of your choice and allow to cool completely before splitting and filling.
Mix your buttercream and use a small amount to stick your cake to your light pink cake board.
Weigh out and colour your buttercream to pastel shades as follows, 300g in Pale pink, 150g in Blue, 150g in Violet and 150g in matt White.
Using a palette knife cover your cake with the Pale Pink sugar paste.
Whilst the Pale Pink buttercream is still wet, begin to add the other colours with flicks of buttercream as pictured.
Once all the colours have been put onto your cake take out a plastic smoother and run it over the edge of your cake blending all the colours together.
Repeat on the top of the cake until all the colours are blended as pictured.
Next, add your Mermaid pipings to the sides and top and finish your cake with a Mermaid cake topper or an Ariel figurine.
