Bake doughnuts with a difference with this easy to follow rainbow doughnuts recipe!

You Will Need
360g Self Raising flour
120g caster sugar
¼ tsp salt
1 egg
6ozs lemon greek yoghurt
80g olive oil
80g cup milk
Zest of 1 lemon
Colour Splash Gel food colours of choice
Wilton Doughnut Pan - 823046
Cake Star Cake Release Spray - 75148
Ready to Use Fondant Icing
Glitters and Sprinkles of choice – we used Hundreds and Thousands and Silver dragees (DP613).
To Make Rainbow Doughnuts

Combine dry ingredients together in a bowl.  Gradually add wet ingredients until just combined.

To create the colours for the doughnuts – divide the mixture into 3 or 4 smaller bowls.  Add Colour Splash gel colour to each bowl in colours of your choice.

Using a teaspoon, place the coloured mixtures in small amounts into each cavity of the doughnut pan, until ¾ full.  Swirl a little to achieve a marbled effect, or leave the colours in blocks.

Bake in fan oven at 160ºC for approx. 15 minutes.  Allow to cool in tin for a few minutes, before removing to cool completely on a rack.

To Decorate

If wished, split the doughnuts and add a lemon buttercream filling. Pipe this for an attractive look.

Then simply heat the tub of fondant icing in the microwave for 30 seconds, colour with Colour Splash gels if wished, and pour or drizzle onto the top of your colourful doughnuts.

If adding decorations, do this immediately, before the fondant icing sets.  Add glitters and sprinkles, or dragees to enhance the finish.
