Step 1

Cover your cake with brilliant white sugar paste.

Roll out a portion of Cake Star Modelling paste to a thickness of 4mm, Using the ear templates cut a left and a right ear from the white modelling paste.

Step 2

Roll out a portion of Metallic pink modelling paste and cut a left and right inner ear.

Step 3

Stick both inner ears onto your outer ears with edible glue.

Step 4

Gently curve your Unicorn ears ether by hand or more effectively laying them over a rolling pin and leaving for a short time to harden up, once hard they should stand up by themselves.

Step 5

Find the middle, of the top, of your cake and position the unicorn ears to either side of the middle as pictured. Stick in place with edible glue.

Step 6

Roll out a portion of Black metallic modelling paste to a thickness of 2-3mm.

Using the 63mm DecoPac round steel cutters cut two circles. Using the same cutter cut two crescent moon shapes from each black circle as pictured.

These are the main parts of the eyes.

Step 7

With the 23mm round steel cutters, cut 3 circles then with the same cutter cut 3 crescent moon shapes. Cut the 3 crescent moon shapes in half to make 6 eye lashes.

Step 8

Find the right position on your cake and glue the large crescent moon shapes in place, then add the lashes as pictured.

Step 9

Weight three pieces of Gold metallic paste to approximately 20g and roll each one into a long (17cm) tapered length. To achieve a smooth taper a cake smoother can prove very useful.

Step 10

Line the three tapers up and nip the thick ends together. Begin to tightly twist them together in one direction until you reach the end.

With a cake smoother roll the horn under the smoother to give the horn a uniform appearance. Cut the thick end flat, then round off the pointed end.

Step 11

Cut a cake dowel in half and very gently insert it into the thick end of the horn.

Once the dowel is firmly insert into the horn find the middle (of the top) of your cake and gentle push the horn and dowel into place with a little edible glue.

Step 12

Mix four different colours of buttercream, pale pink, violet, blue and sunflower. Add all to piping bags (add the ST13 nozzle to the sunflower coloured buttercream)

Step 13

Add the 2D nozzle to an empty piping then add the pink, violet and blue inside the piping bag. Try to have them as level to each other near the nozzle as possible.

Step 14

Away from your cake test the triple colour piping bag with a swirl. All of your colour should be equal in portion if not pull back the colours that are more predominant until you equal colours.

Once you are confident in your triple piping swirl start on your cake at the bottom right. Over lap your swirls as you pip upwards towards the back of the ears. Continue around the back of the ears then on to the forehead and front of the ears as pictured.

Step 15

With the sunflower buttercream bag add small rosettes of buttercream to the unicorns mane.

Step 16

Mix all the Purple Cupcake sprinkles together in a bowl and carefully sprinkle over the mane to complete your unicorn cake.
