These brandy snap baskets are perfect for creating a simple yet stunning dessert for your wedding or party guests. Ideal as a component on your wedding dessert table!

You Will Need


50g Butter
50g Brown sugar
50g Plain flour (06843008)
¼ tsp ground ginger
½ Lemon zest & 1 tsp juice
1 tsp Brandy
Double cream (Whipped)
Flavourings (If desired)
Your choice of edible decorations to suit your theme.
Step 1

Preheat the oven to 180ºC & line a few baking trays with greaseproof paper.

Add the butter, sugar and golden syrup to a saucepan and heat gently until melted. Add the flour and ginger into a bowl and create a weel in the centre. Then add the lemon zest, juice and brandy. Pour into the butter mixture and beat until all the flour is combined.

Step 2

Using a teaspoon, take 2 heaped spoonfuls of mixture and put them into a circle shape on the baking tray. You should be able to fit around 3 per tray (Leaving enough room for them to spread slightly) 

Cook for about 8-10 mins, They should be golden brown in colour and have a 'lacy' appearance. Leave to set slightly before shaping.

Step 3

To make the baskets, Grease the base of a small tumbler and place the biscuit over the base. Leave to set completely.

Once set, Pipe whipped cream (flavoured if desired) into the base of the basket. For a truly whimsical theme, fill with fresh blueberries, raspberries, sliced strawberries & mint leaves!
