Bake a delicious victoria sponge cake with buttercream with this baking kit!
Baking kit includes: 1 x victoria sponge mix and 1 x buttercream mix.
Preheat the oven at 200°C, Add the cake mix, water and butter to a bowl and whisk on a low speed for one minute then increase the speed and whisk for a further 5-7 minutes.
Grease 2x 7" shallow round cake tins and divide the mixture evenly between them.
Place the tins in the centre of the oven and bake for 20-25 mins, until the cake has risen and has turned golden brown in colour. Cool in the tins for 5 mins then tranfer to a wire cooling rack
Beat 120g of softened butter in a bowl, save 1 tablespoon of the icing sugar mix (to dust when assembled) gradually mix in the rest of the icing sugar with the butter until light and creamy.
Spread 2 tablespoons of jam over one of the cooled cakes and spoon the mixed icing over the jam, then place the other cake on top.
Sift the saved icing sugar over the the cake for the perfect finish!
