These Autumn leaf sticky ginger cupcakes are perfect to eat snuggled up by the fire with a cup of hot chocolate! We love the autumnal colours used on these cupcakes, why not give them a go?

To Make The Cupcakes
120g Butter
100g Molasses or Dark Soft Brown Sugar (06843004)
3 tbspns Black Treacle
3 tbspns Golden Syrup
150ml Milk
2 Eggs
1 tspn Vanilla Essence (5572)
25g Ground Ginger
½ tspn Mixed Spice
250g Self Raising Flour (06843006)
Stem Ginger Pieces (Optional)

Preheat oven to 170ºC. Place cupcake cases into muffin trays.

Sieve flour and spices into a bowl and set aside.

Place butter, sugar and syrups into a pan and heat gently until dissolved.  Stir in milk, then cool the mixture sufficiently before adding beaten eggs.  Add vanilla essence and stem ginger if used.

Gradually add the liquid mixture into the flour and combine with a wooden spoon, beating until well mixed in.

Divide the mixture between the cupcake cases, filling to approximately ¾ full.

Bake for 20 minutes. Cool cupcakes in tray for a few minutes, then remove to cool completely.

Step 1

Make maple leaves by colouring pieces of white modelling paste in green and pale yellow. These will be the base colours for the leaves.

Place a piece of paste into the relevant size mould, remove excess paste, then release from mould and leave to dry. 

Repeat for rose leaves using green paste only.

Step 2

Divide some buttercream into three small bowls. Colour one orange, one green and the third, yellow.

Step 3

Place each of the three couplers from the set into a disposable piping bag following the instructions given, and assemble couplers/bags with nozzle and collar.  Add buttercream colours into the piping bags.

Pipe a three coloured ‘Autumn’ swirl onto the cupcakes.

Step 4

Finish the maple leaves by dusting assorted powder colours onto the surface. Red, orange, sunflower, green etc. will enhance the finish). Finish the rose leaves by dusting with green plus a touch of red etc. Steam to set the colours, and leave to dry.

Place onto the cupcakes to decorate.
