Step 1

Divide the cake mixture in equal quantities into two bowls.

Divide the first bowl into four and colour with pastels - lemon, strawberry, blue and pistachio respectively.

Repeat with the second bowl and colour with primaries - peacock, violet, sunflower and leaf.

Step 2

Making half the cupcakes in pastel, and the other half in primary colours create layered and marbled cupcakes:

Layered sponge - place coloured sponges into baking cases in layers, ensuring each colour is spread out carefully touching the case around the edge.

Marbled sponge – place coloured sponge into cases at random, then use a cocktail stick or skewer to ‘swirl’ the mixture.

Bake at 170ºC for 15-20 minutes.  Remove from oven and cool completely.

To Decorate

Place buttercream into piping bag fitted with 1M nozzle.

Pipe swirls onto cupcakes, starting from the outside and finishing in the centre.

Decorate with rainbows and unicorn cake toppers. You may wish to add the horse from the fairytale cutter set, made into a unicorn with the simple addition of a horn.
