Dark and delicious, these Guinness Chocolate Cupcakes are an adapted recipe from Nigella and have a rich and full-bodied flavour for fans of the famous stout.

250g Unsalted Butter
75g Cocoa Powder
400g Caster Sugar
142ml Sour Cream
2 Large Eggs
1 tbsp Vanilla Extract (065601)
275g Plain Flour
2½ tspn Bicarbonate of Soda (065707)

Preheat oven to 180ºC /350ºF/Gas 4. Place baking cases into a muffin tray, or stand on a baking sheet, ready for baking.
Place Guinness and butter into a large saucepan, and heat gently until the butter has melted. Whisk in the cocoa and sugar.
Beat the sour cream with the eggs and vanilla, and add this to the Guinness mixture, stirring well. Whisk in flour and bicarbonate of soda.
Pour the batter into each cupcake case up to ¾ full. Bake for approx. 25 mins. Remove from oven and allow to cool.
To make icing – Lightly whip cream cheese until smooth, add sieved icing sugar and beat together. Add cream and beat again until a spreadable consistency is reached.
Spread or pipe onto the cupcakes and add decoration (Make a shamrock by simply using a small heart cutter x3, plus a stem for each cupcake. Add sprinkles to finish.
