This delicious pumpkin cake recipe is perfect for baking a seasonal treat this Autumn!
Preheat oven to 180ºC, Sieve together flour, mixed spice & bicarbonate of soda.
In a seperate bowl combine the oil and sugar then mix in the eggs.
Add the pumpkin, raisins/sultanas and zest, Mix together well.
Add the dry ingredients to the pumpkin mixture and mix well.
Pour the batter into the greased cake tin and bake for about 1½ hours (Check the cake is baked with a skewer)
Perfect for using up left over pumpkin from Halloween!
