You Will Need
225g Plain Flour
85g Caster Sugar
½ tsp Mixed spice
½ tsp Baking powder (065728)
50g Butter, Cut into cubes.
50g Lard, Cut into cubes.
50g Currants
1 Egg, Beaten
Purple Cupcakes Round cutters (25067)
Large rolling pin (83415)
Step 1

Add all the dry ingredients into a large bowl and mix together, Add the cubed butter and lard and using your fingertips rub into the dry ingredients until crumbly. 

Mix in the currants, then add the egg and mix until you have a soft dough (similar to a shortcrust pastry dough)

Step 2

Roll out the dough on a lightly floured work surface to approx. 1cm thickness. Using the cutters cut out 16 welsh cakes.

Grease a griddle pan and place over a medium heat, Cook the welsh cakes in batches of 4 cooking for 3 mins on each side until golden brown.
