This colourful rainbow cheesecake is the perfect alternative for a unicorn themed birthday celebration!

Basic Cheesecake Recipe

You Will Need:

225g Digestive Biscuits (or any other biscuit of your choice)
115g Butter
400g Cream cheese
300g Mascarpone
200g Icing sugar
1 tsp Vanilla extract (6513)

Grease, and line the base, of an 8” loose base/springform cake tin with baking parchment.

Top Tip: If you are using a shallow tin you will need to line the sides as well to stand approx. 1” taller than the side of the tin.  This recipe uses more filling than normal to accommodate the six different colours.

Place biscuits into a plastic bag and crush with a rolling pin. Melt butter in a saucepan, add crumbs and stir until well mixed.

Place into the base of the tin, press and level with the back of a spoon. Cover and place in the fridge to chill.

Place the mascarpone and cream cheese into a bowl, with an electric hand mixer blend the cheeses together until light and fluffy. Add the icing sugar a little at a time and mix in well. Stir in the vanilla extract.

Colouring the Filling

Divide the mixture into six equal quantities, and add a different colour to each bowl. Mix colours in well.

Add the individual colours of mixture one at a time, spreading each evenly onto the base, and setting in the fridge or freezer before adding the next colour layer.

Set completely in the fridge before removing carefully from the tin, and removing the lining paper.

Make unicorn horns with the gold sugarpaste by rolling a small ‘sausage’ of the paste for each horn, divide into two, and roll each piece into a long thin cone shape. Gently pinch the two pieces together at the base and twist.

Fill piping bag with buttercream/frosting, and pipe swirls around the top edge of the cheesecake. (one swirl for each portion of cheesecake), Add a unicorn horn to each swirl and finish with sprinkles.
