The sun is shining and the temperatures are rising which can only mean one thing…summertime! But what does that mean for your cake decorating? Runny icing? Droopy decorations? Not on our watch! We’ve put together our top tips for cake decorating during the hot and humid months so you can keep things cool in the kitchen this summer.

Massa Ticino Tropic Sugar Paste has been specially formulated for cake decorating in warm, tropical climates.
Madeira Cake is a great option for warmer conditions thanks to its firm texture. Make your own or use a cake mix.
Avoid dark food colours in the heat as these will bleed more. If needed you can pipe white first then pipe your darker colour on top.
Shelf life of your baked and decorated cake will be reduced in warm conditions. Most people would recommend only 2 - 3 days.
To keep your kitchen cooler we recommend baking at least the day before decorating. This keeps your kitchen cooler and makes decorating much easier.
