225g golden caster sugar
3 tbsp whole milk
4 large eggs
1 tsp vanilla extract
225g self-raising flour
Using an electric whisk beat 225g softened butter and 225g golden caster sugar together until light and fluffy then whisk in 4 large eggs, one at a time, making sure you scrape down the sides of the bowl after each one.
Fold in the flour, vanilla extract, and milk .
Divide the mixture evenly into two and pour carefully into your two cake tins.
Bake for 25 mins until golden brown and a skewer inserted into the middle of each cake comes out clean. Leave to cool completely on a wire rack and combine the two cakes with your choice of buttercream icing.
