The Walking Dead Inspired TV Recipe – Brain Cake

Ingredients

Cake

  • 115g unsalted butter
  • 300g granulated sugar
  • 3 eggs
  • 1 tsp vanilla extract
  • 300g plain flour
  • 75g Cocoa powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 240g sour cream
  • 120g cup whole milk
  • 1 tsp red gel food colouring
  • Low-fat pan spray
  • 1 400g tub of rich cream cheese frosting

Raspberry Blood

  • 300ml Seedless raspberry jam
  • 2 tbsp fresh lemon juice
  • 60ml water
  • 1 tsp red gel food colouring

Marshmallow Fondant

  • 280g mini marshmallows
  • 3 tbsp water
  • 840g icing sugar
  • 50g shortening, to grease your hands

 

Method

Cake

  1. Preheat oven to 150ºC.
  2. Whisk together flour, cocoa powder, baking soda, and salt in a medium bowl.
  3. Next, in a large bowl, beat butter with an electric mixer until creamy before adding sugar. Continue to beat until it’s light and fluffy.
  4. In a separate bowl, whisk together eggs and vanilla. Add this egg mixture to the butter-sugar mixture and beat for 2 minutes on a medium speed.
  5. Whisk together sour cream and milk in another small bowl.
  6. Next, on a low speed, alternate gradually adding your flour mixture and sour cream mixture to your butter-egg mix. Start and finish with flour mix. Add the food colouring during this stage.
  7. Pour your batter into a heatproof glass bowl until two-thirds full. Keep your leftover batter to one side.
  8. Bake slowly for 90 minutes
  9. Let it cool and remove it from the bowl. Level the top with a knife. Place the cake, flat side down on a cake plate.
  10. Use a spatula to frost the cake with a thin layer of frosting.

Raspberry Blood

  1. In a saucepan, whisk everything together except for the colouring and bring to the boil over a medium heat.
  2. Once boiling, add in the gel food colouring until thoroughly mixed before removing from the heat.

Marshmallow Fondant

  1. In a microwave-safe bowl, place your marshmallows and enough water to evenly coat them.
  2. Microwave for 30 seconds and then stir. Repeat until the mixture is smooth.
  3. Sift half your sugar into a large bowl and form a well in the centre. Add the melted marshmallows before sifting the remaining sugar on top.
  4. Grease your hands to avoid any marshmallow sticking to you before kneading the sugar and marshmallow together. Keep working it until you it has the consistency of soft toffee.

Decoration

  1. Roll your marshmallow fondant into ½-inch thick strings and weave them across your cake to make the appearance of a brain.
  2. For the finishing touch, use a brush to evenly coat your brain cake with the raspberry blood
